Ingredients
- 1 lb Gourmet Trading Company Green Asparagus trimmed 1 inch pieces
- 1 lb Gourmet Trading Company White Asparagus peeled, trimmed 1 inch pieces
- 1 lb Gourmet Trading Company Purple Asparagus trimmed 1 inch pieces
- 6 tbsp olive oil
- 6 tbsp lemon juice
- 1 1/2 tbsp Dijon mustard
- 3 teaspoons white wine vinegar

Instructions
- In a small bowl combine and whisk olive oil, lemon juice, Diijon mustard and white wine vinegar.
- In a large bowl toss the vinaigrette and green, white and purple asparagus.
