Ingredients
- 6 large eggs
- 1/4 cup half & half
- 1 tbsp olive oil
- 1 tbsp butter
- 3/4 lb Gourmet Trading Company Green Asparagus
- 1 medium tomato sliced
- 1/2 cup parmesan cheese shaved
- salt and pepper to taste

Instructions
- Preheat oven to 375°F, Beat eggs and half & half; add salt and pepper
- Heat oil and butter in a 9”-10” non-stick sauté pan or skillet; add the asparagus and cook for about 5 minutes
- Reduce heat to low; add the egg mixture; arrange the tomato slices on top
- Cook gently, lifting the edges of the frittata to let the uncooked eggs run underneath until just set
- Remove from the stovetop, distribute the Parmesan cheese shavings and transfer the skillet or pan to the oven
- Bake until the cheese has softened and the frittata is firm on top; be careful not to overcook
- Cool in the skillet, slide onto a serving platter and cut into wedges
