Asparagus Parmesan Frittata

  1. Preheat oven to 375°F, Beat eggs and half & half; add salt and pepper
  2. Heat oil and butter in a 9”-10” non-stick sauté pan or skillet; add the asparagus and cook for about 5 minutes
  3. Reduce heat to low; add the egg mixture; arrange the tomato slices on top
  4. Cook gently, lifting the edges of the frittata to let the uncooked eggs run underneath until just set
  5. Remove from the stovetop, distribute the Parmesan cheese shavings and transfer the skillet or pan to the oven
  6. Bake until the cheese has softened and the frittata is firm on top; be careful not to overcook
  7. Cool in the skillet, slide onto a serving platter and cut into wedges
