Ingredients
- 8 spears Gourmet Trading Company Green Asparagus bottoms trimmed
- 6 fingerling potatoes quartered
- 4 small red potatoes quartered
- 2 medium carrots cut into 3" chunks then sliced lengthwise
- 2 medium parsnips cut into 3" chunks then sliced lengthwise
- 1 medium delicata squash halved, seeded and cut crosswise
- 3 tbsp olive oil
- 1 tbsp balsamic vinaigrette
- salt and pepper freshly ground, to taste

Instructions
- Preheat oven to 400°F
- Toss vegetables, oil and vinegar in a shallow baking dish or roasting pan—13” x 9” or larger
- Make certain all vegetables are well coated and in a single layer
- Sprinkle with salt and fresh ground pepper
- Roast uncovered for approximately 30 minutes or until the vegetables start to caramelize and become tender
