- 1 lb Gourmet Trading Company White Asparagus peeled, ends trimmed
- 2 heads radicchio torn
- 1 red onion sliced
- 1/2 cup walnut halves
- 1/2 cup blue cheese Roquefort, Gorgonzola or Maytag, crumbled
- extra virgin olive oil
- red wine vinegar

Instructions
- Divide all ingredients and arrange evenly on 4 plates
- Lay asparagus on top of radicchio, onions, walnuts and blue cheese
- Drizzle with olive oil and vinegar
